- 2 medium sweet potatoes (about 12 ounces each)
- 4 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons fresh rosemary or thyme (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry sweet potatoes; make crosswise cuts in each, stopping 1/4 inch from the bottom.
- Mix melted butter with garlic powder, salt, and pepper; set aside some for later.
- Brush the butter mixture onto the slits of the sweet potatoes and place them on a baking sheet.
- Bake for 30 minutes, then baste with reserved butter and bake an additional 15-20 minutes until tender and golden brown.
- Garnish with herbs, serve warm.
Notes
Cut slices not too deep to keep potatoes connected at the bottom.
Similar-sized potatoes will ensure even cooking.
You can microwave sweet potatoes for a few minutes to soften before slicing.
