Description

Hasselback Sweet Potatoes are a delicious and visually stunning side dish. With rich butter, garlic, and herbs, these elegant potatoes offer a perfect balance of crispy edges and tender insides—ideal for a quick dinner or a special gathering.


Ingredients

  • 2 medium sweet potatoes (about 12 ounces each)
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh rosemary or thyme (optional)

Instructions

  • Preheat the oven to 425°F (220°C).
  • Wash and dry sweet potatoes; make crosswise cuts in each, stopping 1/4 inch from the bottom.
  • Mix melted butter with garlic powder, salt, and pepper; set aside some for later.
  • Brush the butter mixture onto the slits of the sweet potatoes and place them on a baking sheet.
  • Bake for 30 minutes, then baste with reserved butter and bake an additional 15-20 minutes until tender and golden brown.
  • Garnish with herbs, serve warm.

Notes

Cut slices not too deep to keep potatoes connected at the bottom.
Similar-sized potatoes will ensure even cooking.
You can microwave sweet potatoes for a few minutes to soften before slicing.
