Description

Ingredients

  • 3 lbs frozen meatballs
  • 20 oz can pineapple chunks drained with juice reserved
  • 1 red bell pepper chopped
  • 1 ½ cups bbq sauce
  • ¼ cup brown sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 4 garlic cloves minced
  • ¼ teaspoon ginger powder
  • 2 tablespoons green onions for topping

Instructions

  • Place the frozen meatballs, pineapple chunks, and chopped red bell pepper in the slow cooker.
  • In a separate bowl, whisk together the BBQ sauce, brown sugar, soy sauce, white vinegar, minced garlic, and ginger powder, then pour the mixture over the meatballs.
  • Cover the slow cooker and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the meatballs are heated through and achieve an internal temperature of 160°F.
  • Stir to coat the meatballs in the sauce, and top with sliced green onions before serving.

Notes

For a spicier flavor, add red pepper flakes to the sauce.
