  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup dry white wine
  • 1 cup heavy/whipping cream
  • 3 tablespoons pesto
  • 1 pound uncooked potato gnocchi
  • 2 cups (packed) fresh baby spinach
  • 1.5 cups shredded mozzarella cheese
  • Freshly grated parmesan cheese (optional, for serving)
  • Chopped fresh parsley (optional, to taste)
  • Salt & pepper (to taste)

Instructions

  • Preheat oven to 375°F and prepare a deep oven-safe skillet.
  • Crumble and cook sausage over medium-high heat for about 5 minutes until browned.
  • Add chopped onions and cook for another 5 minutes until translucent, then remove grease if needed.
  • Stir in garlic and wine, letting it bubble for about 30 seconds.

  • Fold in uncooked gnocchi and spinach, heating for 1-2 minutes.
  • Top with mozzarella cheese and bake for 15 minutes until melted and bubbly.
