- 1 cup rice
- 1 tablespoon cinnamon
- 4 cups almond milk
- 1/2 cup espresso or strong coffee
- Sweetener to taste (sugar or syrup)
- Ice, for iced version
Instructions
- Start by rinsing the rice under cold water until the water runs clear.
- Blend the rice with cinnamon and water for 2-3 minutes until smooth.
- Strain the mixture through a fine mesh to remove solids, pressing to extract all liquid.
- In a mixing bowl, combine the strained rice liquid with almond milk and sweetener; stir well.
- For hot lattes, heat the mixture in a saucepan over medium heat, then add espresso before serving.
- For iced lattes, fill a glass with ice and add espresso first, followed by the rice-almond milk mixture.
Notes
You can adjust the sweetness level based on personal preference.
For an extra touch, sprinkle with ground cinnamon on top before serving.
Use non-dairy options if lactose intolerant.
