- 1 and 3/4 cups buttermilk
- 1 large egg (optional)
- 4 and 1/4 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 5 tablespoons unsalted butter, cold and cubed
- 1 cup raisins (optional)
Instructions
- Preheat the oven to 400°F (204°C). Prepare a baking pan with parchment paper or use a cast iron skillet or cake pan.
- In a bowl, whisk buttermilk and egg together. In another bowl, combine flour, sugar, baking soda, and salt. Cut in butter until the mixture resembles pea-sized crumbs and stir in raisins.
- Pour the buttermilk mixture into the dry ingredients and fold until the dough is too stiff to stir. Transfer the crumbly dough to a floured surface and knead gently for about 30 seconds.
- Shape the dough into a ball and place it in the prepared skillet or pan. Score the top with a sharp knife about 1/2 inch deep.
- Bake for 45-55 minutes until golden brown and cooked through; an instant-read thermometer should show 195°F (90°C). Tent with foil if it browns too quickly.
- Let cool for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.
Notes
For extra flavor, feel free to add caraway seeds to the dough.
Store leftovers in aluminum foil at room temperature for up to 2 days.
