- 1 teaspoon kosher salt
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
- 15 ounces ricotta cheese
- 1 egg
- 3 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
- In a large pot, bring water to a boil. Add kosher salt and lasagna noodles, cooking them as per package instructions. Drain and set aside with some extra cooked noodles.
- In a skillet over medium heat, add ground beef, breaking it apart. Cook with onion and garlic until the onion is soft, about 3 minutes. Drain excess grease.
- Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer for 10 minutes.
- In a bowl, mix ricotta cheese, egg, 1 1/2 cups mozzarella, Parmesan, and parsley together.
- Pour 1/2 cup of sauce into the bottom of the baking dish.
- On a baking sheet, lay cooked noodles flat. Spread 1/4 cup cheese mixture on each noodle, and top with 1 tablespoon meat sauce. Roll the noodles and place them in the baking dish. Aim for 16 roll ups total.
- Pour remaining sauce over roll ups and sprinkle with remaining 1 1/2 cups mozzarella cheese.
- Cover with foil and bake for 30-35 minutes. Remove foil and broil for a few minutes until cheese is golden.
Notes
Ensure to cook extra lasagna noodles to prevent breakage.
Feel free to customize the filling with vegetables or different meats for a variation.
Store any leftovers in an airtight container in the fridge for up to 3 days.
