Description

These Lasagna Roll Ups are a delightful meal featuring layers of savory ground beef, creamy ricotta, and tangy marinara sauce. Perfect for quick dinners or family gatherings, this recipe is simple to make and truly satisfying for all pasta lovers!


Ingredients

  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 egg
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
  2. In a large pot, bring water to a boil. Add kosher salt and lasagna noodles, cooking them as per package instructions. Drain and set aside with some extra cooked noodles.
  3. In a skillet over medium heat, add ground beef, breaking it apart. Cook with onion and garlic until the onion is soft, about 3 minutes. Drain excess grease.
  4. Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer for 10 minutes.
  5. In a bowl, mix ricotta cheese, egg, 1 1/2 cups mozzarella, Parmesan, and parsley together.
  6. Pour 1/2 cup of sauce into the bottom of the baking dish.
  7. On a baking sheet, lay cooked noodles flat. Spread 1/4 cup cheese mixture on each noodle, and top with 1 tablespoon meat sauce. Roll the noodles and place them in the baking dish. Aim for 16 roll ups total.
  8. Pour remaining sauce over roll ups and sprinkle with remaining 1 1/2 cups mozzarella cheese.
  9. Cover with foil and bake for 30-35 minutes. Remove foil and broil for a few minutes until cheese is golden.

Notes

Ensure to cook extra lasagna noodles to prevent breakage.
Feel free to customize the filling with vegetables or different meats for a variation.
Store any leftovers in an airtight container in the fridge for up to 3 days.
