Description

This Lemon Chicken Rice Skillet combines juicy chicken, fluffy rice, and vibrant spinach with a zesty lemon twist, making it a delightful choice for quick weeknight dinners.


Ingredients

  • 1 Tbsp olive oil
  • 1 cup diced yellow onion
  • 2 lbs chicken breasts
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp ground black pepper
  • ½ lb cauliflower florets
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 2 Lemons (juice and zest)
  • 3 cups fresh baby spinach

Instructions

  • Heat olive oil in a skillet over medium-high heat, add onion and sauté until softened.
  • Add chicken, Italian seasoning, garlic powder, paprika, and pepper; cook until chicken is golden brown.
  • Stir in cauliflower, rice, lemon zest and juice, and a splash of chicken broth.
  • Pour in remaining broth, bring to a boil, then cover and simmer for about 10 minutes.
  • Fold in spinach, cover, and let sit for another 10 minutes.
  • Fluff rice with a fork, adjust seasoning if needed, and serve warm.

Notes

Cut chicken into even-sized pieces for consistent cooking.
Rinse rice before cooking to keep it fluffy.
For extra creaminess, consider adding sour cream or Greek yogurt before serving.
