- 1 cup diced yellow onion
- 2 lbs chicken breasts
- 1½ tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp ground black pepper
- ½ lb cauliflower florets
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 2 Lemons (juice and zest)
- 3 cups fresh baby spinach
Instructions
- Heat olive oil in a skillet over medium-high heat, add onion and sauté until softened.
- Add chicken, Italian seasoning, garlic powder, paprika, and pepper; cook until chicken is golden brown.
- Stir in cauliflower, rice, lemon zest and juice, and a splash of chicken broth.
- Pour in remaining broth, bring to a boil, then cover and simmer for about 10 minutes.
- Fold in spinach, cover, and let sit for another 10 minutes.
- Fluff rice with a fork, adjust seasoning if needed, and serve warm.
Notes
Cut chicken into even-sized pieces for consistent cooking.
Rinse rice before cooking to keep it fluffy.
