- 1 cup grated parmesan cheese, divided
- 1/3 cup all purpose flour
- 1 lemon, zested and juiced
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 2 pounds boneless skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 1/4 cup unsalted butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup baby spinach
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow bowl, combine 1/2 cup of grated parmesan cheese, flour, salt, and pepper.
- Dip each sliced chicken breast into the mixture, coating evenly.
- In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes per side.
- Remove the chicken and set aside. In the same skillet, add minced garlic and sauté for about 1 minute.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer, then add lemon juice and zest.
- Add the chicken back into the skillet and sprinkle with remaining parmesan cheese and fresh spinach.
- Cover and bake in the preheated oven for 15-20 minutes, until the chicken is cooked through and spinach is wilted.
Notes
You can substitute the heavy cream with half-and-half for a lighter version.
