  • 1 cup grated parmesan cheese, divided
  • 1/3 cup all purpose flour
  • 1 lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 2 pounds boneless skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup baby spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, combine 1/2 cup of grated parmesan cheese, flour, salt, and pepper.
  3. Dip each sliced chicken breast into the mixture, coating evenly.
  4. In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook until browned on both sides, about 5-7 minutes per side.
  5. Remove the chicken and set aside. In the same skillet, add minced garlic and sauté for about 1 minute.
  6. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer, then add lemon juice and zest.
  7. Add the chicken back into the skillet and sprinkle with remaining parmesan cheese and fresh spinach.
  8. Cover and bake in the preheated oven for 15-20 minutes, until the chicken is cooked through and spinach is wilted.

Notes

You can substitute the heavy cream with half-and-half for a lighter version.
Try adding your favorite herbs for extra flavor, such as thyme or parsley.
Serve with pasta or rice to soak up the creamy sauce.
