  • 1 pie crust (9-inch) all-butter pie crust
  • 1 1/2 cups chopped pecans
  • 1/4 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 1/2 cup heavy cream
  • 3/4 cup pure maple syrup
  • 1/4 cup bourbon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla bean paste
  • 3 large eggs

Instructions

  • Preheat oven and prepare pie crust; roll out and chill for 30 minutes.
  • Partially blind bake pie crust at 400°F for 20 minutes; cool.
  • Toast chopped pecans at 350°F for 6-8 minutes until fragrant.
  • Make filling by melting butter, adding brown sugar, cream, maple syrup, bourbon, salt, and cinnamon; cool to room temperature.
  • Whisk in eggs and fold in toasted pecans; pour filling into crust.
  • Bake at 350°F for 35-45 minutes until filling is set, then cool for 2-3 hours.

Notes

Use room temperature eggs for better mixing and texture.
Keep an eye on toasted pecans to avoid burning.
