- 1 pound pork tenderloin
- 1/2 teaspoon garlic powder
- Salt & pepper (to taste)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon flour
- 4 cloves garlic (minced)
- 1/2 cup dry white wine (or chicken broth)
- 1 cup heavy/whipping cream
- 1 tablespoon tomato paste
- 1/3 cup sun-dried tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/3 cup freshly grated parmesan cheese
- 1 small handful fresh basil (chopped/torn)
Instructions
- Trim and prepare the pork tenderloin, cutting into 1-inch thick slices and seasoning with garlic powder, salt, and pepper.
- In a skillet, heat butter and olive oil over medium-high heat, then sear the pork for 3-4 minutes on each side until golden brown.
- Remove the pork, lower the heat, and add flour and minced garlic to the skillet for about a minute.
- Deglaze the pan with dry white wine (or chicken broth), whisking until dissolved and reducing the liquid by half.
- Stir in heavy cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes, simmering until the sauce thickens.
- Add parmesan and fresh basil to the sauce, melting and mixing them in, then adjust seasoning to taste.
- Return the pork to the skillet and coat with the sauce before serving.
Notes
Avoid overcrowding the pan when searing to ensure browning.
If the sauce thickens too much, add broth or wine to adjust the consistency.
For added brightness, squeeze fresh lemon juice into the sauce before serving.
