Ingredients

- 2 cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon Instant or active dry yeast
- ½ cup + 1 tbsp lukewarm water
- ½ tablespoon extra virgin olive oil
- ½ or 1 tablespoon flour or semolina flour
- ½ cup pizza sauce
- 5 oz mozzarella cheese
- 1 teaspoon dried oregano
- 3 tablespoons fresh basil, coarsely chopped
Instructions
- Combine flour, salt, and yeast in a bowl.
- Add lukewarm water and olive oil; mix until combined.
- Knead the dough on a floured surface for about a minute.
- Let the dough rise in a greased bowl for 30 minutes.
- Roll out dough to about 0.12 inches thick and cut out circles.
- Preheat oven to 450°F (230°C) and prepare a baking sheet.
- Assemble mini pizzas with sauce, cheese, oregano, and basil on dough rounds.
- Bake for 8-10 minutes until edges are golden and cheese is bubbly.
- Cool briefly, drizzle with olive oil, garnish with basil, and serve.
Notes
Store leftovers in an airtight container for 3-4 days.
Freezing mini pizzas is easy; they’ll keep well for up to 3 months.
