Description

These Oatmeal Molasses Dinner Rolls bring together rich flavors and simple ingredients, creating a fluffy, comforting side for any meal. Ready in a few hours, they are perfect for cozy dinners or gatherings.


Ingredients

  • 1 cup warm water (about 110°F/43°C)
  • 1/3 cup whole milk (or non-dairy substitute)
  • 1 tablespoon Platinum Yeast from Red Star (or active dry yeast)
  • 3 tablespoons brown sugar
  • 3 tablespoons molasses
  • 4 tablespoons unsalted butter (softened)
  • 1 cup old-fashioned whole rolled oats
  • 3 and 1/2 cups bread flour (or all-purpose)
  • 1 teaspoon salt
  • Egg wash (1 beaten egg white + 1 teaspoon water)

Instructions

  • Activate the yeast by mixing warm water, milk, yeast, and 1 tablespoon sugar; let sit until frothy.
  • Add remaining sugar, molasses, butter, oats, and salt; mix in 1 cup of bread flour.
  • Knead dough until smooth, adjusting flour as necessary. Let rise until doubled in size, about 1.5-2 hours.
  • Shape dough into 15 rolls, place in greased baking pan, and allow to rise again for 30-60 minutes.
  • Preheat oven to 350°F (177°C) and bake rolls for 26-27 minutes until golden brown.

Notes

Store rolls at room temperature for 2-3 days or refrigerate for a week.
Freeze rolls for up to 3 months; warm in the oven before serving.
Avoid over-kneading the dough for best texture.
