- 1 tablespoon Platinum Yeast from Red Star (or active dry yeast)
- 3 tablespoons brown sugar
- 3 tablespoons molasses
- 4 tablespoons unsalted butter (softened)
- 1 cup old-fashioned whole rolled oats
- 3 and 1/2 cups bread flour (or all-purpose)
- 1 teaspoon salt
- Egg wash (1 beaten egg white + 1 teaspoon water)
Instructions
- Activate the yeast by mixing warm water, milk, yeast, and 1 tablespoon sugar; let sit until frothy.
- Add remaining sugar, molasses, butter, oats, and salt; mix in 1 cup of bread flour.
- Knead dough until smooth, adjusting flour as necessary. Let rise until doubled in size, about 1.5-2 hours.
- Shape dough into 15 rolls, place in greased baking pan, and allow to rise again for 30-60 minutes.
- Preheat oven to 350°F (177°C) and bake rolls for 26-27 minutes until golden brown.
Notes
Store rolls at room temperature for 2-3 days or refrigerate for a week.
Freeze rolls for up to 3 months; warm in the oven before serving.
