- 1 cup crushed Oreos (plus additional for stuffing)
- ¼ cup brown sugar

- 1 tsp vanilla extract
- 1 large egg
- ½ cup chopped baking chocolate
Instructions
- Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine melted butter, brown sugar, and granulated sugar; whisk until smooth.
- Add vanilla extract and egg to the mixture, stirring gently.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mix until combined.
- Incorporate chopped baking chocolate and ¾ cup crushed Oreos into the dough.
- Take about 1 tablespoon of dough, flatten it, place an Oreo in the center, and seal it with more dough.
- Roll the cookie in remaining crushed Oreos and place on the baking sheet, spacing them apart.
- Bake for 8-10 minutes until edges are golden and centers are soft.
- Let the cookies cool briefly on the pan before transferring to a wire rack.
