Description

This Peanut Butter Brownie Baked Oatmeal combines ripe bananas and creamy peanut butter with chocolate almond milk, creating a flavorful comfort food that’s perfect for breakfast or a quick snack. It’s easy to make and deliciously satisfying!


Ingredients

  • 2 2/3 cups over ripe mashed bananas
  • 1/3 cup creamy peanut butter
  • 1 cup chocolate almond milk
  • 1/4 cup maple syrup
  • 2 1/2 tsp vanilla extract
  • 3 cups rolled oats
  • 1/2 cup cocoa powder
  • mini-vegan chocolate chips

Instructions

  • Preheat the oven to 350 degrees F and spray a 9 x 13 inch pan with non-stick spray.
  • Mash enough over ripe bananas to yield 2 2/3 cups.
  • In a bowl, combine the mashed bananas, peanut butter, chocolate almond milk, maple syrup, and vanilla extract and mix well.
  • Add the rolled oats and cocoa powder to the banana mixture and combine thoroughly.
  • Pour the mixture into the prepared baking pan and spread it evenly.
  • Sprinkle the top with a desired amount of mini vegan chocolate chips.
  • Bake the mixture for 30 minutes, then turn off the oven and leave the pan in the oven for an additional 20 minutes.
  • After 20 minutes, remove from the oven and let cool completely.
  • Optionally, garnish with a melted drizzle of creamy peanut butter once cooled.

Notes

Make sure the bananas are over ripe for optimal sweetness and flavor.
You can substitute almond milk with any other non-dairy milk if desired.
For extra flavor, consider adding chopped nuts or additional chocolate chips.
