- 2 2/3 cups over ripe mashed bananas
- 1/3 cup creamy peanut butter
- 1 cup chocolate almond milk
- 1/4 cup maple syrup
- 2 1/2 tsp vanilla extract
- 3 cups rolled oats
- 1/2 cup cocoa powder
- mini-vegan chocolate chips
Instructions
- Preheat the oven to 350 degrees F and spray a 9 x 13 inch pan with non-stick spray.
- Mash enough over ripe bananas to yield 2 2/3 cups.
- In a bowl, combine the mashed bananas, peanut butter, chocolate almond milk, maple syrup, and vanilla extract and mix well.
- Add the rolled oats and cocoa powder to the banana mixture and combine thoroughly.
- Pour the mixture into the prepared baking pan and spread it evenly.
- Sprinkle the top with a desired amount of mini vegan chocolate chips.
- Bake the mixture for 30 minutes, then turn off the oven and leave the pan in the oven for an additional 20 minutes.
- After 20 minutes, remove from the oven and let cool completely.
- Optionally, garnish with a melted drizzle of creamy peanut butter once cooled.
Notes
Make sure the bananas are over ripe for optimal sweetness and flavor.
You can substitute almond milk with any other non-dairy milk if desired.
For extra flavor, consider adding chopped nuts or additional chocolate chips.
