Description

Pimento Cheese Pasta Salad is packed with irresistible flavors from cheddar cheese, bacon, and a creamy dressing. This easy, homemade recipe is perfect for quick dinners or potlucks, offering a delightful combination of textures and tastes that everyone will love.


Ingredients

  • 12 oz. uncooked short pasta
  • 2/3 cup mayonnaise
  • 1 Tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1 (4-oz.) jar diced pimento peppers, drained
  • 8 slices bacon, cooked, crumbled and divided
  • 1 Tablespoon chopped fresh chives

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and rinse the pasta with cold water to remove excess starch. Drain thoroughly and set aside.
  2. In a large bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Stir in the cheddar cheese, diced red onions, and pimento peppers. Add the cooked pasta and half of the crumbled bacon, mixing well.
  4. Top the salad with the remaining bacon and chopped chives, and serve.

Notes

You can customize the salad by adding your favorite vegetables or proteins.
For a spicier kick, consider adding diced jalapeños or a splash of hot sauce.
This pasta salad is great for meal prep and can be stored in the fridge for a few days.
