- 1 pound thick-cut bacon, (diced)
- 1 large yellow onion, (finely diced (about 1 ½ cups))
- 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
- 2 teaspoons garlic, (minced)
- ½ cup (100 g) light brown sugar, (packed)
- ¼ cup (60 g) apple cider vinegar
- ¼ cup (79 g) maple syrup
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ¼ teaspoon red pepper flakes, (optional)
Instructions
- In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels while the bacon cooks.
- Using a slotted spoon, transfer the cooked bacon to the lined plate, leaving about ¼ cup of the grease in the skillet and discarding the rest.
- Reduce the heat to medium-low and add the diced onion to the skillet. Cook, stirring often, until the onion is softened and begins to caramelize.
- Add the finely diced pineapple to the skillet. Continue cooking, stirring frequently, until the pineapple releases its juices and softens, about 10 minutes.
- Stir in the minced garlic and cook for about 30 seconds.
- Add the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes (if using). Stir to combine.
- Return the cooked bacon to the skillet and mix everything together.
- Let the mixture simmer over low heat for 20 to 30 minutes, stirring occasionally, until it thickens to a jam-like consistency. If it seems too loose, continue to cook until most of the liquid has evaporated. The jam should be thick and glossy.
- Allow to cool slightly before serving. Serve warm or refrigerate and gently reheat before using.
Notes
Feel free to adjust the level of spice by adding more or less red pepper flakes to suit your taste.
This jam pairs wonderfully with cream cheese on crackers or as a topping on grilled meats.
Store the jam in an airtight container in the fridge for up to two weeks.
