- ice
- 2 ounces rum
- 2 ounces pineapple juice
- 1 ounce coconut milk
- ¾ ounce lime juice
- club soda
Instructions
- Place the mint leaves and brown sugar in a cocktail shaker and press with a muddler to release the mint oils.
- Fill the shaker halfway with ice and add rum, pineapple juice, coconut milk, and lime juice.
- Cover the shaker and shake vigorously until chilled and the ingredients are well combined, about 10 seconds.
- Strain the mixture into a highball glass filled with fresh ice and top with club soda. Garnish as desired, serve immediately, and enjoy responsibly!
