- 4 teaspoons olive oil (divided)
- 2 tablespoons honey (divided)
- ¾ teaspoon salt (divided)
- ¼ teaspoon black pepper
- 1 (8-ounce) goat cheese log
- 2 tablespoons plain Greek yogurt
- 1 teaspoon finely chopped fresh thyme (plus more for serving)
- 1 teaspoon finely chopped fresh rosemary (plus more for serving)
- 1 teaspoon lemon juice (from 1 lemon)
- 2 mandarin oranges (peeled and segmented)
- 2 tablespoons finely chopped roasted pumpkin seeds
Instructions
- Preheat oven to 400°F and rinse beets. Trim tops and roots, rubbing with 2 teaspoons olive oil and seasoning with salt.
- Wrap beets in foil packets and roast on a baking sheet for 40-50 minutes until fork-tender.
- Remove beets from the oven, cool slightly, then peel and cut into 1-inch wedges.
- In a bowl, toss beet wedges with remaining olive oil, honey, salt, and black pepper. Let cool before serving.
- Blend goat cheese, Greek yogurt, honey, thyme, rosemary, and lemon juice until smooth. Avoid over-blending.
- Spread whipped goat cheese on a platter, top with roasted beets and orange segments, sprinkle with pumpkin seeds.
