Description

This elegant dish combines roasted beets’ earthy sweetness with vibrant oranges and creamy whipped goat cheese, making it a perfect addition to any gathering.


Ingredients

  • 1 ½ pounds beets
  • 4 teaspoons olive oil (divided)
  • 2 tablespoons honey (divided)
  • ¾ teaspoon salt (divided)
  • ¼ teaspoon black pepper
  • 1 (8-ounce) goat cheese log
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon finely chopped fresh thyme (plus more for serving)
  • 1 teaspoon finely chopped fresh rosemary (plus more for serving)
  • 1 teaspoon lemon juice (from 1 lemon)
  • 2 mandarin oranges (peeled and segmented)
  • 2 tablespoons finely chopped roasted pumpkin seeds

Instructions

  • Preheat oven to 400°F and rinse beets. Trim tops and roots, rubbing with 2 teaspoons olive oil and seasoning with salt.
  • Wrap beets in foil packets and roast on a baking sheet for 40-50 minutes until fork-tender.
  • Remove beets from the oven, cool slightly, then peel and cut into 1-inch wedges.
  • In a bowl, toss beet wedges with remaining olive oil, honey, salt, and black pepper. Let cool before serving.
  • Blend goat cheese, Greek yogurt, honey, thyme, rosemary, and lemon juice until smooth. Avoid over-blending.
  • Spread whipped goat cheese on a platter, top with roasted beets and orange segments, sprinkle with pumpkin seeds.

Choose similar-sized beets for even cooking.
Avoid over-blending the goat cheese to maintain a creamy texture.
Keep orange segments separate until plating for presentation.
