Description

These roasted carrots are bursting with flavor! With minimal ingredients and simple preparation, they make a tasty and healthy side dish for any meal.


Ingredients

  • 2 pounds carrots (peeled and sliced on a bias into ⅓-inch thick slices)
  • 2 tablespoons oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground paprika
  • ¼ teaspoon ground cumin (optional)
  • ½ teaspoon sea salt
  • ground black pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the sliced carrots with oil, garlic powder, paprika, cumin (if using), sea salt, and ground black pepper until well coated.
  3. Spread the seasoned carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 15 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through the cooking time.
  5. Remove from the oven, allow to cool slightly, and serve warm.

Notes

For extra sweetness, use honey or maple syrup in the glaze.
