- 1 can Ro-tel Diced Tomatoes and Green Chilies
- 1 can Black Beans, rinsed and drained
- 1 can Corn, drained
- 1 tsp Smoked Paprika
- 1 cup Mexican Cheese Blend
- Fresh Cilantro for garnish
Instructions
- Preheat your oven to 400°F.
- Slice the chicken breasts in half lengthwise and season with spices.
- Heat olive oil in a skillet, cook chicken for 3-4 minutes on each side until golden brown.
- Remove chicken and sauté chopped onion until softened.
- Add Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
- Return chicken to skillet, spoon mixture on top, and sprinkle cheese over everything.
- Bake for 5-7 minutes, checking the chicken's internal temperature.
- Garnish with cilantro before serving.
