Description

Ingredients

  • 2 large Chicken Breasts
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil
  • 1/2 medium Onion, finely chopped
  • 1 can Ro-tel Diced Tomatoes and Green Chilies
  • 1 can Black Beans, rinsed and drained
  • 1 can Corn, drained
  • 1 tsp Smoked Paprika
  • 1 cup Mexican Cheese Blend
  • Fresh Cilantro for garnish

Instructions

  • Preheat your oven to 400°F.
  • Slice the chicken breasts in half lengthwise and season with spices.
  • Heat olive oil in a skillet, cook chicken for 3-4 minutes on each side until golden brown.
  • Remove chicken and sauté chopped onion until softened.
  • Add Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  • Return chicken to skillet, spoon mixture on top, and sprinkle cheese over everything.
  • Bake for 5-7 minutes, checking the chicken's internal temperature.
  • Garnish with cilantro before serving.

Notes

For extra flavor, marinate chicken in spices for an hour before cooking.
Use a meat thermometer to check chicken doneness (165°F).
