Description

This Shrimp Scampi Orzo combines tender shrimp and orzo pasta in a creamy garlic sauce, making it a quick and elegant dish perfect for dinners or gatherings.


Ingredients

  • 3 tablespoons butter
  • 1 pound uncooked shrimp (3140 count)
  • 1 cup uncooked orzo pasta
  • 45 cloves minced garlic
  • 1/41/2 teaspoon crushed red pepper flakes
  • 1/2 cup dry white wine
  • 2 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt & Pepper to taste
  • Freshly grated Parmesan cheese (optional)

Instructions

  • Melt butter in a large pot over medium-high heat.
  • Add shrimp and cook until pink and opaque, then set aside.
  • Stir in orzo, garlic, and crushed red pepper flakes for 2 minutes.
  • Add white wine and cook until evaporated.
  • Pour in chicken broth and boil gently for 12 minutes, stirring often.
  • Fold in shrimp, lemon juice, and parsley. Adjust seasoning.
  • Let sit covered for 3 minutes before serving.

Notes

Avoid overcooking the shrimp to keep them tender.
Stir the orzo often to prevent sticking during cooking.
