Description

Ingredients

  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon worcestershire
  • ¼ cup honey
  • 1 tablespoon dijon mustard or any kind
  • 1 teaspoon italian seasoning
  • ½ teaspoon onion powder
  • 2 cloves garlic peeled and smashed
  • ½ teaspoon ground black pepper
  • 2 pounds boneless skinless chicken breasts (about 67 pieces)

Instructions

  1. In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, soy sauce, worcestershire sauce, honey, dijon mustard, Italian seasoning, onion powder, and black pepper. Add smashed garlic cloves to the mixture.
  2. Take a gallon-size bag, place the chicken in it, and pound with a rolling pin for even thickness. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 4 hours or overnight.
  3. Preheat the oven to 400°F. Remove chicken from the refrigerator and place it in a sprayed baking pan, letting it return to room temperature. Discard the marinade.
  4. Bake for 35-45 minutes, or until the internal temperature of the chicken reaches 165°F in the thickest part.
  5. For grilling, preheat the grill to 400°F, spray with nonstick grill spray, and grill the chicken for 5 minutes on each side. Close the grill to cook until the temperature reaches 165°F.
  6. Let the chicken rest for at least 10 minutes before slicing.
