- ½ cup olive oil
- ¼ cup balsamic vinegar
- 1 tablespoon lemon juice
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon worcestershire
- ¼ cup honey
- 1 tablespoon dijon mustard or any kind
- 1 teaspoon italian seasoning
- ½ teaspoon onion powder
- 2 cloves garlic peeled and smashed
- ½ teaspoon ground black pepper
- 2 pounds boneless skinless chicken breasts (about 6–7 pieces)
Instructions
- In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, soy sauce, worcestershire sauce, honey, dijon mustard, Italian seasoning, onion powder, and black pepper. Add smashed garlic cloves to the mixture.
- Take a gallon-size bag, place the chicken in it, and pound with a rolling pin for even thickness. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 4 hours or overnight.
- Preheat the oven to 400°F. Remove chicken from the refrigerator and place it in a sprayed baking pan, letting it return to room temperature. Discard the marinade.
- Bake for 35-45 minutes, or until the internal temperature of the chicken reaches 165°F in the thickest part.
- For grilling, preheat the grill to 400°F, spray with nonstick grill spray, and grill the chicken for 5 minutes on each side. Close the grill to cook until the temperature reaches 165°F.
- Let the chicken rest for at least 10 minutes before slicing.
