Ingredients

  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • In a bowl, whisk together the eggs and milk (or cream). Season with a little salt and pepper.
  • Pour the egg mixture into the pan with the melted butter and gently scramble, stirring occasionally until soft curds start to form but are not fully cooked.
  • Add the smoked salmon and continue to cook, scrambling the mixture until the eggs are just set and still moist.
  • Sprinkle with chopped chives and serve, either in the pan or on serving plates.

Notes
