Description

Ingredients

  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon

  • 1/4 tsp freshly ground black pepper
  • 3/4 cup unsulphured or dark molasses
  • 1/2 cup hot water
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 cup confectioners' sugar
  • 1/4 cup orange juice

Instructions

  • Preheat the oven to 350°F (177°C) and grease a loaf pan.
  • In a bowl, whisk together flour, baking soda, spices, and salt.
  • In another bowl, whisk molasses and hot water.
  • Cream butter and brown sugar until light and fluffy, then add egg and vanilla.
  • Mix dry ingredients with wet ingredients until just combined.
  • Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  • Cool the loaf, then drizzle with glaze made from confectioners’ sugar and orange juice.

Notes

Store tightly wrapped at room temperature for 2 days.
For gluten-free, substitute all-purpose flour with a gluten-free blend.
