- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 ½ cups frozen chopped spinach, thawed and drained
- ½ cup fresh parsley, finely chopped
- ½ cup feta cheese, crumbled
- ¼ cup Parmesan cheese, grated
- 2 large eggs, divided
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 (10×15-inch) sheet puff pastry, thawed
Instructions
- Preheat oven to 375°F and grease a muffin pan.
- Thaw and drain the spinach, squeezing out excess moisture.
- In a saucepan, melt butter and sauté onion and garlic until translucent.
- Mix spinach with parsley, feta, Parmesan, one egg, salt, and pepper.
- Roll out the puff pastry and cut into rectangles.
- Press pastry into muffin cups, fill with mixture, and fold corners over.
- Brush with egg wash and bake for 25-30 minutes until golden brown.
- Cool for 5 minutes before serving.
Notes
Ensure to squeeze out all moisture from the spinach to avoid sogginess.
Room temperature eggs mix better with the filling.
