Description

These Spring Brunch Puff Pastry Egg Tarts combine crispy bacon, fluffy eggs, and melty cheese in a flaky pastry. They are easy to prepare and perfect for brunch gatherings.


Ingredients

  • 4 slices of original bacon, cut into 1 inch pieces
  • 13 ounces puff pastry dough, thawed completely
  • 4 eggs
  • 1 tablespoon water
  • 1/3 cup whole milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dijon mustard
  • 1 cup cheddar cheese, grated from the block
  • 1/4 cup green onion for serving, sliced thinly on a bias

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cook the bacon in a skillet over medium low heat until crispy, then transfer to a paper towel lined plate to absorb excess grease.
  3. Create an egg wash by whisking together one egg and the water in a bowl.
  4. Line a full size cookie sheet with parchment paper and unroll the puff pastry.
  5. Slice the puff pastry into 8 rectangular pieces and arrange them on the cookie sheet.
  6. Use a paring knife to lightly score a border around the inside of each pastry piece and fork prick the center to prevent puffing.
  7. Brush the tops of the tarts with the egg wash and bake for 10 minutes.
  8. While the tarts bake, whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper in a bowl.
  9. Take the puff pastry out of the oven and gently press the centers down with a fork.
  10. Carefully pour the egg mixture into each tart, being cautious not to overfill, and sprinkle with half of the cheddar cheese.
  11. Return the tarts to the oven and bake for another 10 minutes.
  12. Remove the tarts and add the cooked bacon pieces and remaining cheese on top before baking for an additional 5 minutes.
  13. Once baked, top with sliced green onions and serve warm.

Notes

For an extra touch, serve with dijonnaise sauce on the side.
Make sure the puff pastry is completely thawed for best results.
Feel free to customize with your favorite vegetables or herbs.
