Description

These Strawberry Swirl Marshmallows boast a delightful strawberry flavor with a fluffy texture, made easy with unflavored gelatin and fresh ingredients. Whip them up for a sweet treat that everyone will love!


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water, divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • Combine unflavored gelatin with 1/2 cup of water in a small bowl and let it bloom.
  • In a large saucepan, mix granulated sugar, light corn syrup, remaining 1/2 cup of water, and salt. Heat the mixture to 240 degrees F over medium heat.
  • Stir in strawberry jello to the saucepan until combined.
  • Transfer the bloomed gelatin to the stand mixer bowl; slowly pour in the hot sugar mixture to dissolve the gelatin.
  • Whip the mixture with the whisk attachment for 8 to 10 minutes until fluffy and stiff.
  • Prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
  • In a small bowl, mix powdered sugar and cornstarch, reserving half for dusting later.
  • Dust the greased pan with the powdered sugar and cornstarch mix.
  • In the final minute of whipping, add strawberry extract and food coloring, and continue to beat.
  • Pour the whipped marshmallow mixture into the prepared pan.
  • For a red swirl, add 1 to 2 drops of food coloring on each side of the mixture and use a skewer to swirl it.
  • Cover the marshmallow mixture with the reserved powdered sugar/cornstarch mix to prevent sticking.
  • Let the marshmallows rest for at least 4 hours, preferably overnight, to firm up.
  • Use a sharp knife or pizza cutter to cut the marshmallows into 12 pieces; dust knife with powdered sugar/cornstarch if sticky.
  • Coat the marshmallows in additional powdered sugar to ensure they aren't sticky.

Notes

For best results, let the marshmallows sit overnight to achieve the perfect texture.
If desired, enhance the flavors by adding a touch more strawberry extract.
Store the marshmallows in an airtight container to keep them fresh.
