Description

Sweet Potato Pasta is a comforting dish that combines creamy sweet potatoes, savory garlic, and delectable spices for a quick and flavorful meal. Perfect for family dinners or cozy nights in!


Ingredients

  • 1 tablespoon olive oil
  • 1 medium-sized onion, diced
  • 1 large garlic clove, minced
  • 1 teaspoon smoked paprika
  • 1 lb sweet potatoes, peeled and diced
  • ½ lb good-quality pasta (like rigatoni, penne, or fusilli)
  • Approx. 3-4 cups water
  • 1 teaspoon salt
  • 1 teaspoon thyme leaves
  • ¼ cup cream cheese
  • ¼ cup grated Parmesan cheese
  • Freshly ground black pepper

Instructions

  • Heat olive oil in a pot over medium heat and sauté the onion until soft.
  • Add garlic and smoked paprika, cooking until fragrant.
  • Stir in sweet potatoes and pasta, then add enough water to cover.
  • Bring to a boil, reduce to a simmer, and cook until pasta is al dente.
  • Stir in cream cheese and Parmesan until creamy; adjust seasoning and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
