Description

These Sweet Potato Pie Bars are a comforting treat with creamy filling and warm spices. Quick to prepare, they’re perfect for any occasion!


Ingredients

  • 3 medium sweet potatoes, peeled and cubed
  • 6 tablespoons salted butter, room temperature
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons vanilla bean paste
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 2 whole eggs
  • 2 egg yolks
  • 1/2 cup heavy cream, plus additional for topping
  • 4 oz cream cheese, room temperature
  • 1/4 cup maple syrup
  • 1/4 cup sour cream

Instructions

  • Preheat oven to 375°F and prepare sweet potatoes on a baking sheet; bake for 50-60 minutes until tender.
  • Grease an 8×8 baking pan and line with parchment paper.
  • Beat butter and sugar until fluffy; mix in flour and vanilla. Press into the prepared pan and chill for 15 minutes.
  • Preheat oven to 350°F. Prick crust and bake for 15 minutes, then cool.
  • Melt butter until golden brown; mix in sugar, spices, and eggs. Add sweet potato puree and cream until blended.
  • Pour filling into crust and bake for 45-55 minutes until edges are set. Cool then refrigerate for at least 4 hours.
  • Mix topping ingredients until smooth; spread over cooled bars and chill for 1 hour.

Notes

Room temperature ingredients yield a smoother filling.
Brown the butter for enhanced nutty flavor.
Bars can be made in advance and stored in the fridge.
