- 3 medium sweet potatoes, peeled and cubed
- 6 tablespoons salted butter, room temperature
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 teaspoons vanilla bean paste
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 2 whole eggs
- 2 egg yolks
- 1/2 cup heavy cream, plus additional for topping
- 4 oz cream cheese, room temperature
- 1/4 cup maple syrup
- 1/4 cup sour cream
Instructions
- Preheat oven to 375°F and prepare sweet potatoes on a baking sheet; bake for 50-60 minutes until tender.
- Grease an 8×8 baking pan and line with parchment paper.
- Beat butter and sugar until fluffy; mix in flour and vanilla. Press into the prepared pan and chill for 15 minutes.
- Preheat oven to 350°F. Prick crust and bake for 15 minutes, then cool.
- Melt butter until golden brown; mix in sugar, spices, and eggs. Add sweet potato puree and cream until blended.
- Pour filling into crust and bake for 45-55 minutes until edges are set. Cool then refrigerate for at least 4 hours.
- Mix topping ingredients until smooth; spread over cooled bars and chill for 1 hour.
