This Dill Pickle Egg Salad is bursting with flavor and is incredibly easy to prepare. With hardboiled eggs and crunchy pickles mixed in creamy mayo and mustard, it’s the perfect healthy meal for lunch or dinner.

- 10 eggs hardboiled
- 3/4 cup dill pickles finely diced
- 1 tablespoon pickle juice from the jar
- 1/2 cup mayonnaise i used homemade
- 2 teaspoons dijon mustard
- 1 teaspoon fresh dill minced
- 1/4 cup fresh chives chopped plus more to garnish
- sea salt and freshly ground black pepper to taste
Instructions
- Peel and chop the hardboiled eggs into small pieces.
- In a mixing bowl, combine the chopped eggs and finely diced dill pickles.
- Add the pickle juice, mayonnaise, dijon mustard, fresh dill, chopped chives, and mix well.
- Season the mixture with sea salt and freshly ground black pepper to taste.
- Garnish with additional chives before serving.
Notes
For a creamier texture, use more mayonnaise.
This salad pairs well with bread or crackers.
Store leftovers in an airtight container in the fridge.
