Description

Tiramisu Cookies offer a delightful balance of espresso flavors and creamy mascarpone frosting, making them a perfect dessert for any occasion. Easy to prepare and irresistibly tasty, they are a must-try for any home baker!


Ingredients

  • 1 2/3 cups All-Purpose Flour
  • 1/3 cup Confectioners' Sugar
  • 1 tablespoon Espresso Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup White Sugar
  • 1/2 cup Unsalted Butter (softened)
  • 1 Large Egg (room temperature)
  • 1 tablespoon Vanilla Extract
  • 8 ounces Mascarpone Cheese
  • 1/2 cup Heavy Cream
  • 1 tablespoon Cocoa Powder (for dusting)

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • In a mixing bowl, combine dry ingredients: flour, confectioners’ sugar, espresso powder, baking soda, baking powder, and salt.
  • In another bowl, beat together white sugar and softened butter until fluffy, then add egg and vanilla extract.
  • Gradually mix dry ingredients into wet mixture until a cookie dough forms.
  • Scoop dough onto prepared baking sheets and bake for 13-14 minutes until edges are set.
  • Cool cookies on a wire rack before topping.
  • For the mascarpone topping, beat together mascarpone, heavy cream, confectioners’ sugar, and vanilla until stiff peaks form.
  • Pipe the mascarpone cream onto cooled cookies and dust with cocoa powder.

Notes

For a gluten-free option, use a 1-to-1 gluten-free flour blend.
Make sure eggs and butter are at room temperature for best results.
Store cookies in an airtight container for up to 3 days at room temperature.
