- 1/2 cup Unsalted Butter (softened)
- 1 Large Egg (room temperature)
- 1 tablespoon Vanilla Extract
- 8 ounces Mascarpone Cheese
- 1/2 cup Heavy Cream
- 1 tablespoon Cocoa Powder (for dusting)
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a mixing bowl, combine dry ingredients: flour, confectioners’ sugar, espresso powder, baking soda, baking powder, and salt.
- In another bowl, beat together white sugar and softened butter until fluffy, then add egg and vanilla extract.
- Gradually mix dry ingredients into wet mixture until a cookie dough forms.
- Scoop dough onto prepared baking sheets and bake for 13-14 minutes until edges are set.
- Cool cookies on a wire rack before topping.
- For the mascarpone topping, beat together mascarpone, heavy cream, confectioners’ sugar, and vanilla until stiff peaks form.
- Pipe the mascarpone cream onto cooled cookies and dust with cocoa powder.
Notes
For a gluten-free option, use a 1-to-1 gluten-free flour blend.
Make sure eggs and butter are at room temperature for best results.
Store cookies in an airtight container for up to 3 days at room temperature.
