Description

These Valentine Raspberry Thumbprint Cookies offer a sweet and tangy experience with a buttery shortbread base and vibrant raspberry jam. Perfect for sharing on Valentine’s Day or any occasion requiring a touch of sweetness, these easy-to-make cookies are a delightful homemade treat!


Ingredients

Scale
  • 1 stick unsalted butter
  • 1/3 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract
  • 1 cup + 2 Tbsp gluten-free all-purpose flour
  • 1/4 tsp sea salt
  • 1/3 cup raspberry jam

Instructions

  • Cream together softened butter, powdered sugar, vanilla and almond extract until creamy.
  • Mix in gluten-free flour and sea salt until a thick dough forms.
  • Shape the dough into balls and press a thumb into the center to form a divot.
  • Fill each divot with raspberry jam and chill the cookie sheet for 1 hour.
  • Bake at 375°F for 10-11 minutes until edges turn golden brown.
  • Cool completely on a wire rack.

Notes

Substitute coconut oil for a dairy-free version.
Options for filling include strawberry or apricot jam for a different flavor.
