- 1 cup old-fashioned rolled oats
- 1 cup milk of choice
- ½ cup plain Greek yogurt
- 2 tablespoons cream cheese, softened
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
- ¾ cup fresh strawberries, chopped
- 1 teaspoon lemon juice
- For the topping (optional): 2 tablespoons crushed graham crackers or granola, extra sliced strawberries
Instructions
- Prepare the strawberry mixture by combining chopped strawberries with lemon juice and 1 teaspoon of maple syrup; let sit.
- Make the cheesecake base by whisking cream cheese, Greek yogurt, vanilla extract, and remaining maple syrup with salt until smooth.
- Stir in rolled oats and milk into the cheesecake mixture and let sit for 5–10 minutes.
- Layer the oat mixture and strawberries in jars, starting and finishing with oats.
- Cover and refrigerate for at least 6 hours or overnight.
- Add toppings before serving and enjoy cold.
Notes
Store in airtight containers in the fridge for up to 3-4 days.
Substitute Greek yogurt with non-dairy options for a vegan version.
