Description

These Valentine strawberry yogurt bites combine fresh strawberries with creamy yogurt and crunchy granola, making them a delightful treat that’s easy to prepare. Perfect for sharing and enjoying any time!

Ingredients

Scale
  • ½ cup granola, more for topping
  • 1 cup yogurt of choice
  • ½ cup fresh strawberries, hulled and diced
  • ¾ cup fresh strawberries, sliced or chopped
  • ¼ cup granola, smaller pieces work better

Instructions

  • Line a 12-cup muffin pan with muffin liners or use a 12-cup silicone baking pan.
  • Sprinkle about 2 teaspoons of granola into the bottom of each cup. Set aside.
  • In a medium bowl, add yogurt and strawberries. Use a pastry cutter or fork to mash the strawberries into the yogurt until mostly mixed, leaving some chunks.
  • Stir and fold the mixture with a rubber spatula or wooden spoon until well combined.
  • Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, creating an even layer. Tap the pan to smooth it out.
  • Press about 1 tablespoon of sliced strawberries into the tops of each cup.
  • Sprinkle granola over the strawberries, about 1 teaspoon each.
  • Place the pan into the freezer and chill until firm, approximately 2-4 hours.
  • Once firm, pop out each yogurt bite, let thaw for a few minutes, then enjoy.

Notes

Feel free to use your favorite yogurt flavor for added variety.
For a fun twist, mix in other fruits such as blueberries or bananas.
These yogurt bites make a great snack for kids and adults alike.
