Instructions
- Preheat oven to 350°F (170°C fan) and line two baking trays.
- Sift plain flour and caster sugar together.
- Add cold dairy-free butter, mixing until resembling coarse sand.
- Gradually add ice water until dough forms.
- Chill the dough wrapped in greaseproof paper for 30 minutes.
- Roll out dough on a floured surface to a quarter-inch thick.
- Cut dough into diamond shapes and place on lined trays.
- Fill each diamond with strawberry jam and fold to seal.
- Brush with dairy-free milk and sprinkle with sugar.
- Bake for 20-25 minutes until golden brown.
- Allow to cool and dust with icing sugar before serving.
