  • 2 large apples (peeled, grated, & strained)
  • 1/2 cup oat milk
  • 2/3 cup sugar
  • 1/3 cup olive oil
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon apple pie spice (or pumpkin pie spice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 6 Tablespoons vegan butter
  • 6 Tablespoons vegan cream cheese
  • 23 teaspoons cornstarch
  • 1 1/31 1/2 cups powdered sugar
  • 1/2 teaspoon ground cinnamon (or apple pie spice)

Instructions

  • Preheat your oven to 350°F (175°C) and prepare an 8×8 inch square pan.
  • Grate and strain the apples to remove excess moisture.
  • In a mixing bowl, whisk together the apples, oat milk, sugar, olive oil, and vanilla until blended.
  • Combine dry ingredients with the wet mixture, mixing until just combined.
  • Pour into the prepared pan and bake for 30-32 minutes or until a toothpick comes out clean.
  • Let the cake cool for 10 minutes, then transfer it to a wire rack.
  • Make frosting by mixing softened vegan butter and cream cheese until fluffy, then add cornstarch and powdered sugar.
  • Spread the frosting on the cooled cake and top as desired with cinnamon or apple slices.

Notes

Strain the apples thoroughly to avoid a wet cake.
Use room temperature butter and cream cheese for smoother mixing.
Adjust powdered sugar based on desired frosting sweetness.
