- 2 large apples (peeled, grated, & strained)
- 1/2 cup oat milk
- 2/3 cup sugar
- 1/3 cup olive oil
- 1 teaspoon vanilla bean paste (or vanilla extract)
- 1 1/2 cups pastry flour
- 2 teaspoons baking powder
- 1 teaspoon apple pie spice (or pumpkin pie spice)
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 6 Tablespoons vegan butter
- 6 Tablespoons vegan cream cheese
- 2–3 teaspoons cornstarch
- 1 1/3– 1 1/2 cups powdered sugar
- 1/2 teaspoon ground cinnamon (or apple pie spice)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch square pan.
- Grate and strain the apples to remove excess moisture.
- In a mixing bowl, whisk together the apples, oat milk, sugar, olive oil, and vanilla until blended.
- Combine dry ingredients with the wet mixture, mixing until just combined.
- Pour into the prepared pan and bake for 30-32 minutes or until a toothpick comes out clean.
- Let the cake cool for 10 minutes, then transfer it to a wire rack.
- Make frosting by mixing softened vegan butter and cream cheese until fluffy, then add cornstarch and powdered sugar.
- Spread the frosting on the cooled cake and top as desired with cinnamon or apple slices.

Strain the apples thoroughly to avoid a wet cake.
Use room temperature butter and cream cheese for smoother mixing.
