  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup vegan butter (for crumble)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine almond milk and apple cider vinegar, letting it sit.
  • Mix flour, cane sugar, salt, and cinnamon in a larger bowl.
  • Incorporate cold vegan butter into the dry mixture until it resembles coarse crumbs.
  • Add milk mixture to form the dough, then refrigerate for at least one hour.
  • Prepare the filling with sliced apples, cranberries, cane sugar, cornstarch, spices, and vanilla.
  • Mix crumble topping ingredients together and set aside.
  • Roll out the crust and place it in a greased pie dish.
  • Fill with the apple-cranberry mixture and top with crumble.
  • Bake for 45-60 minutes until bubbly and golden, then cool for 2 hours before serving.

Notes

Use gluten-free flour for a gluten-free version of the pie.
