Description

This Warm Balsamic Chicken Tortellini Salad combines tender chicken, flavorful balsamic dressing, and fresh veggies for a satisfying, quick meal perfect for any occasion.


Ingredients

  • 2 chicken breasts, sliced
  • 1 pound asparagus
  • 3/4 cup shredded carrots
  • 3/4 cup grape tomatoes, sliced
  • 1 20-ounce package cheese tortellini
  • Fresh minced basil (optional for garnish)
  • 1 tablespoon olive oil
  • 1/4 cup Italian dressing
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/8 teaspoon crushed red chili pepper flakes
  • 1 teaspoon salt

Instructions

  • Cook the tortellini in salted boiling water until al dente, then drain and set aside.
  • Whisk together Italian dressing, balsamic vinegar, honey, and red pepper flakes in a small bowl.
  • Heat olive oil in a frying pan over medium-high heat, add chicken, season with salt, and cook until golden and cooked through.
  • Pour in 1/4 cup of the dressing, bring to a boil, and simmer for about a minute.
  • Add asparagus, stirring for 3 minutes, then add carrots and cook until tender.
  • Combine chicken and veggies with tortellini in a large bowl, pour remaining dressing on top, and heat gently until coated.
  • Garnish with basil if desired and serve warm.

Notes

Leftovers can be stored in the fridge for up to four days in an airtight container.
To refresh, gently heat in the microwave; note that veggies may lose some crunch after freezing.
For a zesty twist, consider adding crumbled feta cheese before serving.
