- In a microwave-safe bowl, add the semisweet chocolate disks. Microwave for 30 seconds, then stir. Continue heating in 30-second intervals, stirring in between, until smooth and glossy.
- Mix in the peppermint extract with the melted chocolate until well combined.
- Prepare a baking sheet by lining it with parchment paper or a silicone mat.
- Using a fork, dip each Oreo cookie into the chocolate. Lift it out, tapping the fork against the bowl to remove excess chocolate.
- Place the chocolate-covered Oreo onto the parchment paper.
- Once all cookies are coated, transfer any remaining melted chocolate to a piping bag or a Ziploc bag with a snipped corner.
- Drizzle the chocolate over the cookies in a zigzag pattern and immediately sprinkle with green sprinkles.
- Allow the cookies to sit at room temperature for 30-60 minutes or refrigerate for 15 minutes until the chocolate sets.
