Description

These Cottage Cheese Brownies are deliciously fudgy and loaded with protein. Made with simple ingredients like cottage cheese and almond flour, they’re perfect for a quick snack or dessert that everyone will love.


Ingredients

  • 2/3 cup cottage cheese blended
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese in a blender or food processor until smooth and set aside.
  3. Whisk together the eggs, vanilla extract, coconut sugar, and maple syrup in a large mixing bowl. Stir in the blended cottage cheese until combined.
  4. Add the almond flour, cacao powder, and baking soda, mixing until smooth to create the brownie batter.
  5. Gently fold in the chocolate chips, reserving some to sprinkle on top later for a gooey finish.
  6. Pour the batter into the prepared dish, spreading it evenly, then sprinkle with the reserved chocolate chips.
  7. Bake for 24–26 minutes, until a toothpick inserted comes out mostly clean with a few crumbs for a fudgy texture.
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing.

Notes

For a richer flavor, use dark chocolate chips.
These brownies can be stored in an airtight container at room temperature for up to 4 days.
You can replace coconut sugar with regular sugar if needed.
