  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 casserole dish with nonstick spray. Set aside.
  2. In a mixing bowl, whisk together the chicken broth, dry white wine, and cream of chicken soup until fully blended. Stir in the orzo, well-drained mushrooms, and onion soup mix, then pour the mixture into the prepared casserole dish.
  3. Season the chicken breasts on both sides with garlic powder, onion powder, salt, and pepper. Arrange the chicken on top of the orzo mixture. Cover the dish tightly with foil.
  4. Bake for 55 to 60 minutes, removing the foil halfway through (after the first 30 minutes). Ensure the chicken is fully cooked and the orzo is tender, adding an extra 5 minutes uncovered if the mixture appears too wet.
  5. Once cooked, turn the oven off and distribute the mozzarella and parmesan cheeses over the chicken. Return to the warm oven for 3 to 5 minutes until the cheese melts.
  6. After baking, remove the casserole from the oven and allow it to rest for 5 minutes. Use a fork to fluff the orzo before serving. Garnish with additional parmesan and chopped parsley if desired.

Notes

For a healthier option, substitute the cream of chicken soup with a homemade version or a lower-fat alternative.
Feel free to add vegetables such as spinach or bell peppers for added nutrition.
