Description

This Creamy Chipotle Chicken Chili is a cozy blend of flavors, featuring smoky chipotle peppers and creamy sour cream, perfect for gatherings or a quick weeknight dinner.


Ingredients

  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin

  • 2 chipotle peppers in adobo sauce, chopped
  • 4 cups chicken broth
  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 3 cups rotisserie chicken, shredded
  • 2 tbsp cornstarch
  • 1 cup sour cream
  • 1 cup shredded Monterey jack cheese
  • 1 jalapeño pepper, diced
  • 2 lime wedges
  • 1/4 cup fresh cilantro, chopped

Instructions

  • Heat olive oil in a pot and sauté onion until translucent.
  • Add minced garlic, then stir in spices and cook for another minute.
  • Mix in chipotle peppers and chicken broth, bringing to a boil.
  • Incorporate beans and shredded chicken, simmer for 5-10 minutes.
  • Thicken with cornstarch mixed with water while stirring continuously.
  • Stir in sour cream and Monterey Jack cheese until melted.
  • Garnish with cheese, jalapeño, cilantro, and lime wedges before serving.

Notes

Adjust spice levels by modifying the chipotle peppers used.
