- 4 cups chicken broth
- 2 cans (15 oz each) great northern beans, drained and rinsed
- 3 cups rotisserie chicken, shredded
- 2 tbsp cornstarch
- 1 cup sour cream
- 1 cup shredded Monterey jack cheese
- 1 jalapeño pepper, diced
- 2 lime wedges
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a pot and sauté onion until translucent.
- Add minced garlic, then stir in spices and cook for another minute.
- Mix in chipotle peppers and chicken broth, bringing to a boil.
- Incorporate beans and shredded chicken, simmer for 5-10 minutes.
- Thicken with cornstarch mixed with water while stirring continuously.
- Stir in sour cream and Monterey Jack cheese until melted.
- Garnish with cheese, jalapeño, cilantro, and lime wedges before serving.
