Description

  • 2 bay leaves
  • 2 potatoes, diced
  • 1 sweet potato, diced
  • 3 cups cooked turkey
  • 1 1/2 cups frozen vegetable mix
  • 1 cup double cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

  • Melt butter in a large pot over low heat.
  • Sauté onions, celery, and carrots until softened.
  • Add garlic, sage, and thyme; cook for 30 seconds.
  • Sprinkle flour over the mixture and stir to coat.
  • Gradually pour in turkey stock, stirring until smooth.
  • Add bay leaves, diced potatoes, turkey, and frozen vegetables.
  • Bring to a simmer; cook until potatoes are tender.
  • Stir in double cream and season with salt and pepper.
