Description

  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup heavy cream
  • ½ cup vegetable stock
  • ¼ cup parmesan cheese, grated
  • 3 cups baby spinach
  • 2 tablespoons fresh basil, finely sliced

Instructions

  • Melt the butter in a skillet and sauté garlic and gnocchi until golden brown.
  • Add sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and black pepper; cook until fragrant.
  • Pour in heavy cream and vegetable stock, add Parmesan and simmer until thickened.
  • Fold in baby spinach until wilted and vibrant.
  • Garnish with fresh basil and serve immediately.

For a lighter option, substitute heavy cream with half-and-half or coconut cream.
