Description

Crockpot Cowboy Stew offers irresistible flavor and simple prep with tender beef, savory sausage, and vegetables. Perfect for gatherings or a quick, hearty meal.


Ingredients

  • 1 lb stew meat
  • 1 lb kielbasa sausage (sliced)
  • 1 medium white or yellow onion (diced)
  • 2 large carrots (sliced)
  • 2 stalks celery (diced)
  • 1 large russet potato (peeled and diced)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire
  • 1 (16 oz) can pinto beans (rinsed and drained)
  • 1 (15.25 oz) can corn (drained)
  • 1 (14.5 oz) can diced tomatoes (do not drain)
  • 2 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 2 tablespoons corn starch
  • Salt and pepper (to taste)

Instructions

  • Gather & prepare all ingredients in a large crockpot.
  • Add stew meat, sausage, onion, carrots, celery, and potato.
  • Pour in beef broth, Worcestershire sauce, pinto beans, corn, and diced tomatoes.
  • Sprinkle in chili powder, garlic powder, oregano, salt, and pepper; stir to combine.
  • Cover and cook on low for 7-8 hours or on high for 4-6 hours.
  • For thickening, mix corn starch with cold water before adding it to the stew 10 minutes before serving.
  • Taste and adjust seasoning before serving.

Notes

Browning the meat adds depth to the flavor.
For a lighter option, turkey sausage can be substituted for kielbasa.
This stew is versatile; feel free to add or substitute any favorite vegetables.
