- 1 lb kielbasa sausage (sliced)
- 1 medium white or yellow onion (diced)
- 2 large carrots (sliced)
- 2 stalks celery (diced)
- 1 large russet potato (peeled and diced)
- 1 cup beef broth
- 1 tablespoon Worcestershire
- 1 (16 oz) can pinto beans (rinsed and drained)
- 1 (15.25 oz) can corn (drained)
- 1 (14.5 oz) can diced tomatoes (do not drain)
- 2 tablespoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 2 tablespoons corn starch
- Salt and pepper (to taste)
Instructions
- Gather & prepare all ingredients in a large crockpot.
- Add stew meat, sausage, onion, carrots, celery, and potato.
- Pour in beef broth, Worcestershire sauce, pinto beans, corn, and diced tomatoes.
- Sprinkle in chili powder, garlic powder, oregano, salt, and pepper; stir to combine.
- Cover and cook on low for 7-8 hours or on high for 4-6 hours.
- For thickening, mix corn starch with cold water before adding it to the stew 10 minutes before serving.
- Taste and adjust seasoning before serving.
Notes
Browning the meat adds depth to the flavor.
For a lighter option, turkey sausage can be substituted for kielbasa.
This stew is versatile; feel free to add or substitute any favorite vegetables.
