Description

These Funfetti Cookies are bursting with flavor, thanks to sprinkles and simple ingredients. Ideal for celebrations or just a treat any day, they are easy to bake and irresistibly delicious.


Ingredients

  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 ¼ cups granulated sugar
  • ¼ cup light brown sugar, firmly packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar for rolling the cookie dough balls

Instructions

  1. Whisk together all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set aside.
  2. In a large bowl, beat the butter, granulated sugar, and light brown sugar together until light and fluffy, about 3 to 4 minutes.
  3. Add the egg and egg yolk to the mixture, mixing until combined. Then, stir in the vanilla extract and almond extract.
  4. Gradually add the dry ingredients to the butter mixture, mixing until no white streaks remain. Finally, fold in the jimmies sprinkles.
  5. Prepare a baking sheet with parchment paper. Scoop out cookie dough onto the sheet and chill in the refrigerator for 2 hours or overnight.

Notes

Make sure your butter is at room temperature for the best texture.
Use clear vanilla extract for lighter-colored cookies, and adjust the size of your dough scoops for smaller cookies if desired.
