- ¼ cup light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 ½ teaspoons vanilla extract
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar for rolling the cookie dough balls
Instructions
- Whisk together all-purpose flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set aside.
- In a large bowl, beat the butter, granulated sugar, and light brown sugar together until light and fluffy, about 3 to 4 minutes.
- Add the egg and egg yolk to the mixture, mixing until combined. Then, stir in the vanilla extract and almond extract.
- Gradually add the dry ingredients to the butter mixture, mixing until no white streaks remain. Finally, fold in the jimmies sprinkles.
- Prepare a baking sheet with parchment paper. Scoop out cookie dough onto the sheet and chill in the refrigerator for 2 hours or overnight.
Notes
Make sure your butter is at room temperature for the best texture.
Use clear vanilla extract for lighter-colored cookies, and adjust the size of your dough scoops for smaller cookies if desired.
