Description

These Greek Chicken Bowls are packed with flavor and freshness! Juicy chicken thighs marinated in herbs served over cauliflower rice, combined with a zesty tahini sauce and fresh veggies make this a healthy and quick meal for any day of the week.

Ingredients

Scale
  • lbs boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 tablespoon coconut yogurt or Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1½ teaspoons sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 4 cups cauliflower rice, cooked
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • ½ cup kalamata olives
  • 1 avocado, sliced
  • ¼ medium red onion, thinly sliced
  • Optional: crumbled feta
  • ¼ cup red wine vinegar
  • ¼ cup warm water
  • ½ teaspoon sea salt
  • 1 teaspoon maple syrup or honey, optional
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • 1 teaspoon maple syrup, optional
  • 1 tablespoon warm water if needed to thin the sauce
  • 1 teaspoon chopped fresh dill

Instructions

  1. In a bowl, whisk together all marinade ingredients: olive oil, coconut yogurt (or Greek yogurt), lemon juice, red wine vinegar, minced garlic, oregano, thyme, sea salt, black pepper, and paprika.
  2. Add the chicken thighs to the marinade, making sure each piece is well coated. Cover and let it marinate for at least 30 minutes, or refrigerate overnight for deeper flavor.
  3. While the chicken marinates, prepare the tahini sauce by whisking together the tahini, lemon juice, olive oil, minced garlic, Dijon mustard, sea salt, maple syrup (if using), and warm water to adjust the consistency as needed.
  4. Cook the cauliflower rice according to package instructions and set aside.
  5. Grill or sauté the marinated chicken over medium-high heat for about 6-7 minutes on each side, or until fully cooked.
  6. To serve, assemble the bowls by placing cooked cauliflower rice at the base, topping it with grilled chicken, cherry tomatoes, diced cucumber, kalamata olives, sliced avocado, and red onion. Drizzle with tahini sauce.
  7. Finish with optional crumbled feta and enjoy your healthy Mediterranean bowl.

Notes

Allowing the chicken to marinate for a longer time enhances the flavor even more.
You can substitute tahini with hummus for a different sauce option.
Feel free to add any seasonal veggies for extra nutrition and color.
