Description

Experience the delightful blend of lean ground beef, fluffy rice, and melted cheese in this Healthy Cheesy Ground Beef Rice Casserole. Ideal for busy weeknights or family gatherings, this dish offers a comforting taste that brings loved ones together around the table.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook ground beef and onion in a skillet until browned and meat is cooked through (about 7-8 minutes).
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • In a bowl, mix cream of mushroom soup with milk or beef broth and season with paprika, salt, and pepper until smooth.
  • Combine cooked rice, beef mixture, and 1 cup cheese in the prepared dish, then pour sauce over everything and mix well.
  • Top with remaining cheese and cover with foil. Bake for 20 minutes, then uncover and bake for another 10 minutes until cheese is bubbly and golden.
  • Let rest for 5 minutes, garnish with parsley if desired, and serve.

Notes

Use ground turkey for a leaner option.
Substitute brown rice for white rice, adjusting cooking time as needed.
For a homemade version, create a white sauce instead of using canned soup.
