This Healthy Crockpot Tater Tot Casserole combines savory ground beef, creamy cheese sauce, and crispy tater tots for a simple yet mouthwatering meal perfect for busy nights or cozy gatherings.

- 32 ounces frozen Tater Tots
- 1 pound ground beef, browned and drained
- 2 cups shredded Cheddar cheese, divided
- 10.5 ounces cheese sauce
- 1 tablespoon taco seasoning
- 1/2 tablespoon minced onion
- 1/4 cup freshly chopped cilantro, for garnish
Instructions
- Lightly spray the inside of the crockpot with nonstick cooking spray.
- Spread half of the frozen tater tots evenly at the bottom of the crockpot.
- In a medium bowl, mix the browned ground beef, cheese sauce, taco seasoning, and half of the shredded cheddar cheese.
- Spoon the beef mixture over the tater tots, spreading evenly.
- Arrange the remaining tater tots in a single layer on top of the beef mixture.
- Sprinkle the remaining shredded cheddar cheese over the tater tots.
- Cover and cook on HIGH for about 2½ hours until the cheese is melted and edges are bubbly.
Notes
Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
For a vegetarian version, use a meat alternative like lentils or crumbled tofu.
Add diced jalapeños for a spicy kick!
