Ingredients

  • 3 Vine Ripe Tomatoes
  • 1/2 small Onion
  • 2 tbsp Fresh Basil, Chopped
  • 1 clove Garlic, Minced
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1/4 Fine Sea Salt
  • 1 French Baguette, Sliced
  • 3 tbsp Extra Virgin Olive Oil
  • Crumbled Feta
  • Balsamic Vinegar Glaze

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Dice tomatoes and onion, removing seeds and excess juice, then mix in a bowl.
  • Add basil, garlic, oregano, black pepper, and salt to the tomato mixture; stir and let sit.
  • Slice the baguette, brush with olive oil, and arrange on the baking sheet.
  • Toast baguette slices in the oven for 8 minutes, flipping halfway through.
  • Assemble bruschetta by topping toasted baguette with the tomato mixture.
  • Drizzle with balsamic glaze and top with crumbled feta.

Notes

Remove tomato excess moisture for a crisper bruschetta.
